Bulgarian Cheese Banitza

. Ingredients

- . 1 kg ready rolled sheets of banitza pastry (filo)
- . 250g crumbled sirene (white cheese)
- . 5 eggs
- . 150g butter or margarine - melted
- . 1 tsp baking soda
- . 1 tsp sugar (optional)

.Preparation:
. . 1. Heat oven
to 400 degrees.
. . 2. In a large bowl, combine cheese, butter and eggs until smooth.

. 3. Fold one sheet of filo dough in half so it measures
30cm by 20cm.
. . 4. Brush lightly with melted butter.
. . 5. Portion
out a 12mm strip of filling along either the 30cm edge
if you want an "S"-shaped scroll,
. or along
the 20cm edge for a
cigar-shaped roll and 6mm away from the edges.

. Fold up bottom edge first,
then sides and then roll away from yourself
until you have a tight cylinder.
.
. 6. Brush lightly with more melted butter.
. . 7. Repeat with remaining 15 sheets of filo dough.
.
. Shape long cylinders into "S" shapes or leave short cylinders
as is and place them
. on a parchment-lined pan.
. . 8. Sprinkle with sea
salt and chopped green onions, if desired.
. . 9. Bake for 20 minutes or until golden
brown and crispy.

Serve warm or at room temperature.
. You can also use any filling you desire, just use less cheese.
